Vegetable Cutlet

Ingredients :

 2 Boiled Potatoes 
 Carrot - 1 (medium size)
 Beans - 6
 Onion - 1
 Green Peas - fistfull
 Beetroot - 1/4
 2 Green Chilies    
 2 tsp Fresh Anaar (Pomegranate)    
 1 tsp Coriander leaves (chopped)    
 1 pinch Garam Masala Powder    
 2 tsp Onion (finely chopped)    
 1/4 tsp Red Chilly Powder    
 Oil for frying    
 4 Bread Slices    
 Salt to taste    
 1 tbsp Sooji    
 Chat Masala and aamchur powder to taste 


 

Method :

  1. Peel and mesh the potatoes along with the bread slices and keep aside.
  2. Grind the peas along with the ginger and green chillies.
  3. Mix ground peas, grated carrot & beet root, and shelled annar ( Pomegranate ) with meshed potatoes.
  4. Add all masala such as salt, chaat powder, aamchur powder, red chilli powder, garam masala in above mixture.
  5. Divide the mixture into equal parts and shape them into cutlets.
  6. Cover the cutlets with Sooji powder.
  7. Deep fry in the heated oil in a pan./ kadahi.
  8. Serve with pudina(mint) chutney and tomato sauce.

Perfect Mashed Potatoes

Its been some time since i missed my kitchen, so today after a long time i have been to my heaven, and made some yummy potato mash

Ingredients

  • 2 potatoes, peeled and quartered length-wise
  • 4 Tbsp heavy cream
  • 2 Tbsp butter
  • 1 Tbsp milk
  • Salt and Pepper
A potato masher

Method

1 Put potatoes into a saucepan. Add 1/2 teaspoon salt. Add water until potatoes are covered. Bring to boil, reduce heat and simmer, covered, 15-20 minutes, or until done - a fork can easily be poked through them.
2 Warm cream and melt butter, together, either in microwave or in a pan on the stove.(i like it been cooked in pan, i like some extra calories) Drain water from potatoes. Put hot potatoes into a bowl. Add cream and melted butter. Use potato masher to mash potatoes until well mashed. Use a strong spoon to beat further, adding milk to achieve the consistency you desire. (Do not over-beat or your potatoes will get gluey.) Salt and pepper to taste. you can also add a little turmeric powder for yellowish color.



You can also try some roasted sesame seeds for garnishing
