SABUDANA KHICHADI

my morning experiment Sabudana Khichadi :)
try it, enjoy it


Ingredients:

1 cup sabudana (drained in water for at least 3-4  hours),
1 no. potato,
4 green chillies,
1 tea spoon Jeera,
2 table Spoon ghee,
2-3 table spoon Roasted groundnuts powder,
Sugar 1 tea spoon,
1/2 tea spoon turmeric powder
and salt for taste.



Preparation:

Heat Ghee in a deep pan(kadhai)
Add Jeera into the heated ghee.
Add Potato cut into small square shape.
Add Green chillies finally chopped.
Saute the potatos cook for 5 mins and turn soft.
Then add the Sabudana mixed with the Groundnut powder, turmeric powder, Salt and Sugar (for taste).
Let it fry for 5 to 8 mins. keep stirring.
You can add Lemon Juice 1 tea spoon for taste. The hot Sabudana Khichadi is ready to serve.
Tips :
(1) While draining the Sabudana make sure that theres no water remained. you can sprinkle some water after draining.
(2) Groundnut powder should not be very soft.

spicy tasty tomato garlic pickle

i accidentally invented a tasty pickle. everyone must try this tasty pickle 

Ingredients
Ripe Red Tomatoes - 2,
Garlic cloves - 5,
Tamarind paste - 1 tsp,
Red chilli powder - 3 tsp(as per taste),
Turmeric powder - 1 tsp,
Fenugreek seeds - 1/2 tsp,
Asefeotida - 1 tsp,
Mustard seeds - 1 tsp,
Gingerly oil - 5 tsp,
Salt - as per taste.






Directions

  • Grind the tomatoes with tamarind paste in to a fine paste without any lumps and keep aside. 
  • Roast the fenugreek and asefeotida with a tsp oil and crush in to fine powder. 
  • Heat 2 tsp oil in kadai, splutter the mustard, add the garlic and saute for 2mins(dont let it to brown), add the tomato paste, cover and let it boil in medium heat. 
  • When the mixture gets little thick, add the turmeric powder, red chilli powder, fenugreek powder and salt and mix well. If needed add a tsp oil and again cover, simmer and boil for 5mins. 
  • Now uncover, give a stir and adjust taste, boil till the oil floates on sides and thokku consistency is reached. 
  • Store in an airtight container and use whenever you want ! 

Tastes great with Curd rice, dal rice, dosa, idli, chappati, parathas

tasty roti(chapati) fry

a great morning starter,you can also use last nights left over chappatis, easy to prepare, takes on 10-15 mins if rotis are ready with you :) and its tasty to eat. a must try for bachelors and working woman who are always in a hurry early morning.

Ingredients 

3-4 Rotis(chapatis)
Oil 1 tsp (optional)
1 medium onion - fine chopped
1 medium tomato - fine chopped
3-4 Green Chilies - chopped
3-4 curry Leaves
1 cups Cabbage fine chopped (optional)
1/2 cup Peas (optional)
1 Capsicum cut in small pieces 
1 tsp chilli powder
1/2 tsp haldi (turmeric powder)
1/2 tsp coriander powder
1tsp sugar 
1 stem Coriander Leaves chopped for garnishing
Salt – to Tast




Method 

cut out rotis into small square pieces
add a little oil in pan add all the vegetables and let it cook a bit 
add chilli powder, haldi, coriander powder and sugar
mix well and add roti 
add salt as per taste
cook for 10 minutes and garnish with coriander leaves 

cook on slow flame for 15-20 mins the roti pieces will get crispy, kids just love crispy things 
serve with ketchup or raita

Paneer (cottage cheese) Capsicum Curry

Ingredients 

1/2 tsp mustard seeds

1/2 tsp cumin seeds
1 tsp red chilli powder
1 tsp turmeric powder
1 tsp coriander powder 
1/2 tsp garam masala powder
1/2 cup green peas
1/2 cup whipped yogurt
1 sliced onion
1 sliced capsicum
Olive Oil
400 gms paneer (cottage cheese)
salt to taste
coriander leaves for garnishing 




Prepration Method 


 Add 1/2 a tsp each of mustard and cumin seeds, along with 1 sliced onion and 1 thinly sliced capsicum to a non-stick pan over medium heat. Drizzle with 1 teaspoon Olive oil. Once the seeds start sputtering and the onion's changed colour, add 1-2 tsp salt, 1 tsp coriander powder, 1 tsp red chilli powder, and 1 tsp turmeric powder. When everything is well combined, add 400gms paneer and 1/2 cup green peas to the pan. When you notice that each paneer cube is well coated with the masalas, add 1/2 cup whipped yogurt and stir well. Simmer (open) for 4-5 minutes and your paneer capsicum curry is ready. As simple as that :)

Garnish with fresh coriander leaves, enjoy Happy cooking :)

Moong dal : The bean sprouts are rich in Vitamin A, B, C and E and many minerals, such as calcium, iron and potassium. It is recommended as a food replacement in many slimming programmes, as it has a very low fat content. It is a rich source of protein and fibre, which helps lower blood cholesterol level. Tasty Rava (Sooji) Halwa

its a very popular sweet dish around the country (INDIA)

Ingredients:
  • 1/2 cup sooji (rava, semolina flour)
  • 1/4 cup ghee (clear butter)
  • 1/3 cup sugar
  • 1 1/2cup water and milk in equal proportion
  • Pinch of cardamom powder
  • 1 tablespoon sliced almonds for garnish
  • 1 tablespoon kishmish ( raisins ) 


Method:

  1. Boil the water and milk with sugar, and cardamom powder in a pan over low medium heat. Bring to a boil and Set aside.
  2. Melt the ghee in a frying pan on medium heat.
  3. Add sooji and roast to golden brown color; stirring constantly this will take about 5 to 8 minutes. Sooji will be golden brown in color and will have a light sweet aroma.
  4. Add the syrup slowly, as you add the syrup to sooji water will splatter.
  5. Turn down the heat to medium low and let it cook for about 2-3 minutes.
  6. Sooji will absorb the milk, as the Halwa cools so keep Halwa a little more softer then you want.
  7. Garnish with almonds and kishmish

Serving suggestion:
  1. Serve hot for best taste. If you like, garnish with shaved pistachio, almonds or shredded coconut.
  2. For breakfast serve with aloo poori.

delicious Banana Oats Smoothie :)

A simple, yummy and healthy start up for the day, for bachelors like me :)
its simple and very tasty, try it 

Ingredients:
  • banana - 1 full
  • Oats - 1/2 cup (I used quaker oats)
  • Cold Milk - 2 cups
  • Honey - 1.5 tsp
  • Sugar - 1/2 tsp


Method:

  • Roast oats for 2-3 mins until it gets a little crispy and nutty aroma rises 
  • Now blend banana, oats with milk until it becomes smooth and creamy 
  • add sugar or honey as per your taste
  • transfer into a glass a serve chilled enjoy



Friends you can add oats without roasting but it gives a slight stickiness, by roasting the oats it gets less sticky and it adds a extra nutty flavour 

for extra health concious people you avoid sugar and add only honey, i mix up both sugar and honey tastes great  :) 

you can experiment this shake with all fruits and nuts its yummy and healthy and a great way to start your morning

Add some vanilla ice cream on top add and extra taste and kids will love it

A Glass of Healthy low fat, low cal alternative to fastfood shakes. Tastes ten times better. easy to prepare and very healthy for breakfast :)


Ingredients 

1/2 sliced banana
a glass of milk
1 tsp vanilla extract
1 tsp cinnamon
1/3 cup crushed ice
sugar or honey as per taste




Preparation of Banana Milkshake

  1. Chop half a banana into slices
  2. Blend all the ingredients in blender. Blend until smooth.
  3. Pour mix into glass. 
  4. Sprinkle about 1 teaspoon of ground cinnamon on shake.
  5. sugar is optional you can have it without sugar also just add a teaspoon of honey
  6. Drink it. enjoy as simple as that ;)

Rice Khichdi


Ingredients:

2 cups rice
1 cup toor dhal
5 cloves
20-30 peanuts
1 cinnamon
some small pieces of carrots
15-20 green peas
5 cardamom
2 finely sliced onion
1 potato sliced into small cubes
6 to 8 small size tomatoes
4 slitted into halves green chillies
12 to 15 mint leaves
1/2 bundle corriander leaves
1 tsp garlic paste
1 1/2 tsp ginger paste
salt to taste
1/4 cup veg. oil
a few curry leaves
3 cups water
a pinch of turmeric powder



Preparation of  rice khichdi:
  • Wash and cook dhal and peanuts with a pinch of turmeric powder. Set aside.
  • Don't discard the cooked dhal water.
  • Fry the onions, cloves, cinnamon and cardamom.
  • When onions are golden add slit green chillies, mint, curry leaves and a part of the corriander leaves.
  • Keep the remaining corriander leaves for garnishing.
  • Add salt, ginger and garlic paste. Fry for 2 minutes.
  • Add the washed, drained rice and chopped tomatoes,green peas, carrot pieces. Fry for few minutes.
  • Add the cooked dhal and peanuts, mix well and add 3 cups of water.
  • Add cooked dhal water. Cook it for 8 to 10 minutes till the rice is done.
  • Garnish with chopped corriander leaves and serve hot.
  • For extra taste and calories add 2 heaped teaspoon of ghee

Gujarati Kadhi

One of the most delicious curry from the land of gujarat. simple to cook, tasty to eat.

Ingredients :

2 Cups Sour Curd 
4 tsp Besan 
1/2 inch Ginger, chopped 
2 Green chillies, chopped 
Salt To Taste 
Handful Coriander leaves
2 tsp Oil 
1 Pinch Turmeric powder 
1/2 tsp Cinnamon powder\

Seasoning :

1/4 tsp Cumin seeds 
1/4 tsp Mustard seeds 
Few Curry leaves
1 Pinch Asafoetida



Preparation :
  • Beat the curd and add two cups of water. Add the besan, salt, turmeric powder and mix well.
  • Make a paste of ginger, chillies, cinnamon and coriander leaves.
  • Boil the curd mixture on slow heat and stir constinuosly. Add the ground paste, and boil again.
  • Heat oil in a pan, add all seasonings. Fry until they splutter.
  • Pour this seasonings over kadhi. Garnish with corainder leaves and serve hot with rice or khichadi.

Yummy Peanut Butter

Ingredients
1 cup roasted peanut
half a cup sugar 
1-2 teaspoon groundnut oil



Method
Mix all the ingredients in a food processor until it become a very smooth paste, as simple as that, add some cardamom for an extra aroma and flavour

Coconut Chutney

Its been a while since i have been to kitchen, as i was roaming around the country for a while, but now back to my favourite place my own kitchen, this time with some south indian touch :)

Ingredients :
Grated fresh coconut - 1/2 cup
Roasted gram - 1/2 cup
Green Chilli - 5-6 
Tamarind - small one
Salt - to taste
Asafoetida (hing) - small pinch
Oil - 1 tsp
Mustard seed - 1/4 tsp
Curry leaves - 2 springs
Red chilli - 1-2



Method :
Soak tamarind in little water for 10 minutes
Put coconut, green chilli, roasted gram, tamarind pulp, salt, asafoetida in a mixer and grind to make a coarse paste.
Heat 1 teaspoon of oil, add mustard seeds and allow it to splutter, then mix curry leaves and broken red chilli in to oil
Pour it over the chutney
Mix it well and serve it with Idli, dosa, vada, etc

My version of coconut chutney : add some coriander and mint leaves while grinding, it will add an extra aroma and tangy flavour to chutney :)

everyone's favourite Batata Vada

Batata Vada from western India is a popular fast food snack in which chickpea batter (besan) is used to dip mashed potatoes.
Batata Vada, is a deep fried indulgence. Spiced mashed potatoes are dipped in chickpea batter (besan), deep fried to a golden brown and served with mint-coriander chutney and/or tamarind chutney or just plain Tomato ketchup.
Batata Vada is also sandwiched between pav (bun) smeared with chutney, it becomes a Vada Pav.


INGREDIENTS

For the stuffing
  1. 3 Potatoes
  2. 1 teaspoon mustard seeds 
  3. 1 tablespoon oil
  4. 6 Curry leaves
  5. 2 finely chopped Green chillies
  6. 2 crushed Garlic
  7. 1/4 teaspoon Turmeric Powder 
  8. 1 tablespoon lemon juice
  9. Handful of fresh coriander leaves for garnishing
  10. Oil for deep frying
  11. Salt as per taste

For the batter

  1. 1 cup Besan (chickpea flour)
  2. A Pinch of cooking/Baking soda (soda bi carb)
  3. Just enough water to make a smooth and thick batter
  4. salt as per taste


METHOD

For the stuffing
Boil the potatoes without taking out its peel (potato should not be over boiled).
Allow them to cool and then peel the potatoes and MASH them.
Take a pan and heat 1 tablespoon oil on high flame.
Add mustard seeds. When they start spluttering add green chillies, garlic and curry leaves.
Shallow Fry this for 2 minutes.
Reduce the flame to low and then add the mashed potatoes, salt, turmeric powder, finely chopped coriander leaves, lemon juice and mix well.
Remove from flame.
Allow it to cool and Split the potato stuffing into smaller balls.

For the batter
Take a bowl and add besan, a little salt, cooking soda and sufficient water to mix and make a thick paste.
Heat oil in a kadai (Frying Pan).
Take a ball of potato mixture, dip it in the besan paste so that there is a thick layer of besan paste around the potato ball.
Deep fry the potato ball in oil till it gets a golden brown color.
Serve hot with Coriander and Tamarind chutney or Tomato sauce.

TIP : You can omit the turmeric powder if you want to retain the whiteness of the potato stuffing.

Vegetable Cutlet

Ingredients :

 2 Boiled Potatoes 
 Carrot - 1 (medium size)
 Beans - 6
 Onion - 1
 Green Peas - fistfull
 Beetroot - 1/4
 2 Green Chilies    
 2 tsp Fresh Anaar (Pomegranate)    
 1 tsp Coriander leaves (chopped)    
 1 pinch Garam Masala Powder    
 2 tsp Onion (finely chopped)    
 1/4 tsp Red Chilly Powder    
 Oil for frying    
 4 Bread Slices    
 Salt to taste    
 1 tbsp Sooji    
 Chat Masala and aamchur powder to taste 


 

Method :

  1. Peel and mesh the potatoes along with the bread slices and keep aside.
  2. Grind the peas along with the ginger and green chillies.
  3. Mix ground peas, grated carrot & beet root, and shelled annar ( Pomegranate ) with meshed potatoes.
  4. Add all masala such as salt, chaat powder, aamchur powder, red chilli powder, garam masala in above mixture.
  5. Divide the mixture into equal parts and shape them into cutlets.
  6. Cover the cutlets with Sooji powder.
  7. Deep fry in the heated oil in a pan./ kadahi.
  8. Serve with pudina(mint) chutney and tomato sauce.

Perfect Mashed Potatoes

Its been some time since i missed my kitchen, so today after a long time i have been to my heaven, and made some yummy potato mash

Ingredients

  • 2 potatoes, peeled and quartered length-wise
  • 4 Tbsp heavy cream
  • 2 Tbsp butter
  • 1 Tbsp milk
  • Salt and Pepper
A potato masher

Method

1 Put potatoes into a saucepan. Add 1/2 teaspoon salt. Add water until potatoes are covered. Bring to boil, reduce heat and simmer, covered, 15-20 minutes, or until done - a fork can easily be poked through them.
2 Warm cream and melt butter, together, either in microwave or in a pan on the stove.(i like it been cooked in pan, i like some extra calories) Drain water from potatoes. Put hot potatoes into a bowl. Add cream and melted butter. Use potato masher to mash potatoes until well mashed. Use a strong spoon to beat further, adding milk to achieve the consistency you desire. (Do not over-beat or your potatoes will get gluey.) Salt and pepper to taste. you can also add a little turmeric powder for yellowish color.



You can also try some roasted sesame seeds for garnishing
